Yogurt & Buttermilk

Yogurt is considered as great protein source. Procedure of making yogurt increases vitamin B sources in it like Thiamine, riboflavin. Yogurt is lighter than milk and easy to digest also. Conversion of Yogurt from milk is done with the lactic bacterias Lactobacillus bulgaricus and Streptococcus thermophilus which are added to pasteurized, homogenized milk and heated to increase the bacterial activity. These bacteria convert the milk sugars (lactose) into lactic acid.

There are five types of Yogurt(Dahi)

  1. Mand Yogurt
  2. Swadu yogurt
  3. Swadamla yogurt
  4. Alum yogurt
  5. Atyalum yogurt

 

  1. Mand Yogurt is similar to milk half pasteurized, which means it is half fermented and half not fermented very thin. We should not take half fermented yogurt as this yogurt creates a imbalance in Vata, Pitta, Kapha, increase burning, urination problems, digestive problems.

 

  1. Swadu yogurt is fully pasteurized and fermented , thick, little bit sour. This yogurt is good for health and help in cleaning blood vessels.

 

  1. Swadamla yogurt is properly fermented and some astringent taste. Benefits are same as swadu yogurt

 

  1. Alum or sour yogurt is purely sour in taste. Good for digestion, in excess increases cough, increase raktapitta.

 

  1. Atyalum yogurt can be recognize if during its intake you feel very sour, burning in throat, sour feeling in teeth. Atyalum increase digestion but excess intake creates a burning inside as it is hot in nature.

 

How to reduce the bad effects of Yogurt?

To counter yogurt bad effects we should add salt, roasted cumin seeds, mint should be used.

Benefits of Yogurt

People who feels burning, hot body from inside should take a thick yogurt. Yogurt reduces the thirst and if used on face it reduces dryness, wrinkles and glow the skin. Yogurt with honey is good over yogurt with sugar.

Butter made from yogurt if used on lips with mixing of saffron make lips red.

Helpful in high blood pressure, fat, work as a kidney clenser.

Yogurt reduce heart strokes, heart diseases by reducing cholesterol.

Yogurt also increases the hair growth, blackness. For this take 1 cup yogurt and 10 seeds of black pepper, 1 lemon should be mixed all together. Apply the mixture on hair for 20 minutes and gently wash the hair.  If people is facing hair fall then do not mix lemon.

If a person is suffering from eczema then take a cup of yogurt and put it in brass utensils for 3 days and apply on affected skin on 4th day to get rid of it.

Harms of Yogurt?

Sour yogurt should not be taken because it impacts digestive system, increase burning and creates cough in body.

Who should not take Yogurt?

People suffering from asthma, cough, swelling, raktapitta or in any kind of fever, skin diseases should not take yogurt.

Yogurt should not be taken in night. It creates a imbalance in Vata, Pitta, Kapha of the body.

What is buttermilk (chaach, Mattha)?

Buttermilk is always considered good than milk and yogurt. Buttermilk is lighter than yogurt and help to reduce all toxins in the body. To make a buttermilk using cow milk yogurt is considered greatest of all yogurts. After removing all butter from yogurt we should use three parts of yogurt and one part of water. Mixing both together is called buttermilk. This buttermilk should not contain any sour taste. Buttermilk helps us to digest oily products, sweets.

Why we removed butter from yogurt is due to reduce its fats. Buttermilk contains sodium, potassium, carbohydrates, vitamin c , calcium, magnesium, vitamin B12 etc. There are two types of buttermilk

Sweet

Salty

Salted buttermilk should be taken in morning or in afternoon after breakfast and lunch to get its benefits.

If you like Sweet buttermilk then it should be taken in morning on empty stomach.

Buttermilk is considered as a nector in ayurveda.

Buttermilk is helpful in haemorrhoids, piles, oedema, malabsorption syndrome, irritable bowel syndromes, urinary retension, ascites, anaemia, rheumatoid arthritis.

How to make buttermilk from yogurt?

For this we required 400gm of yogurt made from cow milk

100gm of water

Roasted asafoetida one pinch

Roasted cumin seeds one tablespoon

Mint leaves 5 to 10 leaves

Coriander leaves 20 to 30 leaves

Black or rock salt according to taste.

mix all in mixture machine run the machine for 1 to 2 minutes only and drink.

Harms of buttermilk?

Since buttermilk is hot in nature it should be avoided in summer.

Person with injury should not take buttermilk

Person with debility(weak person) should not take buttermilk

Person suffering from giddiness(a sensation of whirling and a tendency to fall or stagger, dizziness)

Diseases related to pitta imbalance

Skin diseases like psoriasis, eczema.
